So, Easter kinda came and went, huh? Yeah it did. So here’s what we’re going to do: we’re going to pretend that this cake is decorated with eggs and stuff because I’m MENTAL and I will decorate baked goods with anything I like, whether it’s a holiday or not. It’s Easter! And what perfect timing it is, because I have spent the entire week craving (and eating) chocolate, and now I get a free pass to stuff my face with even more of it. I do have a confession. We might have eaten Easter eggs last weekend because my mum couldn’t control herself and encouraged us all to eat them as well. But shh, keep it secret. Come in, there’s cake!

Caramel is not my friend. I’m too impatient. I watch the pan for what feels like hours, and the sugar just stares up at me from the bottom of the pan in its original state. So I whack the heat up and before I know it the bottom has burnt while the top still hasn’t melted. So I throw it away and start again, and usually the second attempt works fine. Let’s make a second batch!

You didn’t think he only got a main course, did you? Every birthday meal needs a dessert! Chris is rather fond of this sticky toffee cake and that is what I was originally going to make for this birthday. But then I ordered a copy of Green and Black’s Ultimate Chocolate Recipes and came across this recipe. Sticky toffee pudding AND chocolate? Yes please. So I suggested it to Chris (because I was just thinking about what Chris would like for his birthday, obviously. Not because I really, really wanted chocolate sticky toffee pudding. No no no. Not at all.) and he agreed that it sounded like something he’d want to put in his face. So I made this and we put it in our faces and I was so happy I could have exploded. Get in my face, toffee!

This started life as a jam and white chocolate roly poly. My Good Food magazine came with a yummy looking dessert on the front and I took it round to Mum’s house to show her. “That looks nice”, she said, “what’s in it?”. “Well, it’s got suet in it…”. This was thoroughly rejected. So I decided to turn it into swiss roll instead. (more…)
