Galaxy cupcakes

Where I used to work, when someone decided to leave for a new job/career break/miscellaneous life change, my lovely friend Emma would make themed cupcakes for their last day. (Incidentally, Emma has started a cupcake blog which you can find here. Have a look!). When I found out a friend, Anna, from where I am now working is leaving for a new job, I remembered the tradition that Emma had introduced and decided to make some cupcakes using Anna’s favourite chocolate bar. It also gave me an excuse to do some more chocolate bar themed baking, after the Mars bar successes! Go get your Galaxy from under the bed, or wherever else you hide it like that bird in the advert

Chocolate caramel cupcakes

At the beginning of February, I went to London to visit my lovely friend, Jessica. Jess and I have known each other since we were teeny tiny children at nursery. I won’t lie, there’s been some rocky patches in our friendship; Jessica once savagely kicked me under the table in class when we were 9. Fortunately, I decided to forgive her (once I’d kicked her back) and we have been friends ever since, even if we have only managed one visit every five years due to lots of moving around 🙂 (more…)

Christmas chocolate cupcakes

Christmas! Christmas Christmas Christmas! Did you have a good one? Did you get lovely presents? More importantly, have you eaten bloody loads? We had a slow build up to Christmas (a few biscuits, chocolates and a gingercake), then BOOM, Christmas Eve, time to eat your face off. Non-stop. For the next week. So we’re mid-eating season at the moment and I’ve managed to stuff in loads. Christmas Eve we had a huge meatball lasagne (recipe coming soon) followed by some deep dish chocolate chip cookie puddings (recipe coming when I manage to take a photo before scoffing it. This hasn’t happened yet.). Christmas Day involved the usual massive fry-up mid-morning, followed by constant chocolate eating until the big roast dinner. And now it’s Boxing Day! These cakes just say autumn to me (not literally, that would be mental. And would I still have the heart to eat them if they could talk? I’m so glad they can’t talk.). I think it’s the warm, fudgey flavours of the toffee and the autumnal orange of the fudge and icing, and sticky toffee anything is just great comfort food. While this cake is still my favourite of any sticky toffee dessert, these cupcakes are delicious and definitely worth a make. You want some sticky toffee? Yeah you do!

Are Mars bars the finest chocolate bar ever created? Yes. Yes they are. Mars bars have got me through many an afternoon at work and I would eat several every day if I could.
