Galaxy cupcakes

Where I used to work, when someone decided to leave for a new job/career break/miscellaneous life change, my lovely friend Emma would make themed cupcakes for their last day. (Incidentally, Emma has started a cupcake blog which you can find here. Have a look!). When I found out a friend, Anna, from where I am now working is leaving for a new job, I remembered the tradition that Emma had introduced and decided to make some cupcakes using Anna’s favourite chocolate bar. It also gave me an excuse to do some more chocolate bar themed baking, after the Mars bar successes! Go get your Galaxy from under the bed, or wherever else you hide it like that bird in the advert

So, Easter kinda came and went, huh? Yeah it did. So here’s what we’re going to do: we’re going to pretend that this cake is decorated with eggs and stuff because I’m MENTAL and I will decorate baked goods with anything I like, whether it’s a holiday or not. Lemon meringue cake

It’s Easter! And what perfect timing it is, because I have spent the entire week craving (and eating) chocolate, and now I get a free pass to stuff my face with even more of it. I do have a confession. We might have eaten Easter eggs last weekend because my mum couldn’t control herself and encouraged us all to eat them as well. But shh, keep it secret. Chocolate caramel cupcakes

At the beginning of February, I went to London to visit my lovely friend, Jessica. Jess and I have known each other since we were teeny tiny children at nursery. I won’t lie, there’s been some rocky patches in our friendship; Jessica once savagely kicked me under the table in class when we were 9. Fortunately, I decided to forgive her (once I’d kicked her back) and we have been friends ever since, even if we have only managed one visit every five years due to lots of moving around 🙂 (more…)

Cappuccino cake

So, I’ve cheated a bit here, because I didn’t make this cake. My clever sister, Kim, made it. I used to make this cake. I did. A lot. It was actually one of the first cakes I made. But then, one day, Kim made it. Kim does not pay attention to proper measurements. Kim does not follow directions properly. Kim doesn’t even use the right shaped tin. Apple cake with toffee sauce

Caramel is not my friend. I’m too impatient. I watch the pan for what feels like hours, and the sugar just stares up at me from the bottom of the pan in its original state. So I whack the heat up and before I know it the bottom has burnt while the top still hasn’t melted. So I throw it away and start again, and usually the second attempt works fine. Let’s make a second batch!

Sticky gingerbread

Gingerbread is a word which makes me very suspicious. When someone tells me they have gingerbread, I know that in a few moments I will be either ecstatic or absolutely gutted. The reason being that the word “gingerbread” appears to be used both for the squidgy, amazing cake kind and the chewy, slightly rubbish biscuit kind (though Emma tells me these should really be referred to as gingerbread biscuits). Yeah yeah, I know, I’m in the minority here, but gingerbread men do nothing for me. Gingerbread cake, on the other hand, makes me so happy, I just want to lie on a big pile of it and smoosh my face into it’s lovely, sticky insides. I don’t know. Let’s move on. Vanilla macaroons

I hate almonds. A lot. The taste of them in sweet things is just utterly unpleasant. So why exactly did I think it was a good idea to make some? Well, I know that they’re supposed to be difficult to make, a little prone to throwing a tantrum in your oven and breaking your heart, and I felt like taking on the challenge. I was absolutely thrilled when they emerged from my oven all pretty and not an exploded mess (don’t get me wrong, I’m not pretending they’re perfect, but I think they look pretty damn good for a first attempt). But now I have 14 macaroons sitting in a tupperware tub which I have no intention of eating. Come inside for more pretty macaroon photos
