I have nothing to say about this except I wish I’d made four times as much so I could be stuffing my face with more of it right now.
Chicken and chorizo pasta
A Cafe Lula recipe
Serves 2
Ingredients:
olive oil, for frying
2 shallots, chopped
2 small chicken breasts, sliced
70g cooking chorizo, sliced
1 small courgette, sliced
1-2 tbsp Marsala
225g passata
1 tsp thyme
salt and black pepper, to season
2 tsp double (heavy) cream
180g pasta
In a large pan, heat a little olive oil over a medium-high heat and fry the shallots for a couple of minutes until softened. Add the chicken and fry until the outside is mostly cooked, then add the chorizo. Fry for 2-3 more minutes and then add the courgette, cooking for a couple of minutes. Add the Marsala and stir well. Add the passata, thyme, salt and black pepper, stir well, and simmer gently while you cook the pasta. Add the cream to the sauce when the pasta still has 3 minutes left to cook and stir well. When the pasta is cooked, toss it with the sauce and serve.
