Mushroom and chorizo quesadillas
A Cafe Lula recipe
Serves 2 (makes 2 quesadillas)
Ingredients:
a little olive oil, for frying and lightly brushing the tortillas
2 shallots, chopped
125g mushrooms, sliced
60g cooking chorizo, sliced thinly
40g grated mozzarella
2 tortilla wraps (I used flour ones)
Over a high heat, heat a little olive oil in a frying pan and fry the shallots, mushrooms and chorizo until the mushrooms have darkened, the chorizo is cooked through and the shallots are soft and transparent. Transfer the mushrooms, chorizo and shallots to a plate.
Give the frying pan a wipe to get rid of excess oil.
Lightly brush one side of each tortilla wrap with oil. Put the wraps oil-side down on a plate and cover half of each wrap with the mushrooms, shallots and chorizo. Sprinkle 20g cheese on each wrap and fold them in half. Press down to help them stay folded.
Heat the frying pan again over a high heat and add the quesadillas, frying for a minute or two until browned. Turn them over (carefully!) and brown the other side of each. They’re ready now! Eat them!
I may not be able to sing very well, but I sure can appreciate a delicious quesadilla. This recipe is a winner, love the pics-buzz buzz!
I like to think my singing is beautiful but Chris always tells me to be quiet. I’m fairly sure he’s just jealous of my lovely voice though.
