Today’s post is brought to you from my mum’s kitchen! My mum and I are both big fans of fish and seafood, especially crab, prawns and lobster. Our favourite crab recipe was always Singapore chilli crab, but on one holiday in Cornwall we bought enough crab for two nights and decided to try something new with it. That’s when we came up with this recipe.
Look at that lovely granite worktop. Oh! I have only just noticed how fitting it is that this chopping board has a crab on it! Made of tomato! And also chillies, which were meant to go in this but I forgot. Ace.
Mmm, fried tomatoes. At this point you could also add some chopped courgette. Nom.
I’ve indicated some ingredients as optional, but really you can add and omit whatever you like. As long as there’s crab in it, it will be amazing 😀
Crab pasta with tomato and creme fraiche
A Cafe Lula original (by Lula and Mum)
Serves 4, generously
Ingredients:
1 shallot, chopped
150g/5.5 oz cherry tomatoes, halved
1 garlic clove
350g/12.5 oz passata
4tbsp creme fraiche
1tbsp parmesan (optional)
black pepper,to season
a pinch of salt and sugar, to season
a very small amount of mixed herbs (optional)
500g/1lb 1.5 oz pasta
600g/1lb 5 oz white crab meat
a few basil leaves (optional)
Fry the shallot on a low heat until softened. Add the tomatoes and fry for a minute or so, then add the garlic. Fry for a minute or so more, so the tomatoes absorb the flavours, then add the passata and creme fraiche. Once the sauce has heated a bit, add the parmesan and stir in. Season with the black pepper, salt, sugar and herbs and set the pasta on to cook. Allow the sauce to simmer very gently while the pasta cooks. When the pasta has 6 minutes left to cook, add the crab to the sauce and cook over a medium heat to make sure the crab gets good and hot. Test that the crab is hot enough once the pasta is done. Drain the pasta, put it back in its pan and add the sauce and basil. Mix well and serve. Especially good with parmesan (even if it is frowned upon to mix cheese and seafood!).
