Garlic bread might be one of my favourite things in the whole world. I love garlic. I love bread. What’s not to like? It also has the added advantage of keeping vampires away, which is nice.
Garlic pizza bread
Pizza base adapted from Jamie at Home by Jamie Oliver
Serves 4 to 6 (makes two garlic pizza breads)
Ingredients:
250g strong white bread flour
1/4 tbsp salt
1/2 7g sachet active dried yeast
1/4 tbsp golden caster sugar
1 tbsp olive oil
160ml lukewarm water
3 tbsp olive oil
2 cloves garlic, crushed
a pinch of dried chilli flakes
a pinch of oregano
black pepper and salt, to season
In a jug, mis the water, oil, yeast and salt and leave to rest for a few minutes.
Sieve the flour and salt together into a large bowl and make a well in the centre. Pour in the yeast mixture. Using a fork, mix the flour into the middle of the well starting near the centre and gradually working your way outwards until you have a slightly sticky dough.
Knead the dough on a flour dusted surface until smooth and springy (about five minutes). Roll into a ball and place in a flour dusted bowl, sprinkling some flour on top of the dough, and cover with a damp cloth. Let it rise for about an hour or until doubled in size.
Once risen, knead the dough for a few minutes on a flour dusted surface. If you are making this a few days in advance, or just want to stock up the freezer, the dough can be frozen at this stage. Otherwise, preheat the oven to 200C and put a baking tray in the oven. Roll the dough out to about 0.5cm thick. In a bowl, mix the olive oil, garlic, chilli flakes, oregano, black pepper and salt. Take the hot baking tray out of the oven and place the rolled out dough on it. Spread the olive oil mixture evenly over the dough base and bake for 7-10 minutes, until golden. Enjoy! Then go out and breathe on people.
