In case you hadn’t noticed, we eat a lot of pasta. It’s yummy, good for using up leftover ingredients you happen to have in the fridge, and quick for when you’ve had to stay in the office until 9pm. Stupid work.
Parma ham and anchovy pasta
A Cafe Lula recipe
Serves 2
Ingredients:
olive oil, for frying
2 shallots
a few slice of jalapeno, chopped
1 small courgette
5 anchovy fillets, chopped
4 parma ham slices, chopped
250g passata
black pepper, to season
a pinch of sugar
fresh basil leaves, shredded
180g pasta
In a pan or wok, heat a little olive oil over a medium heat. Add the shallots and fry for a few minutes. Add the jalapeno and fry a few minutes more. I put the pasta on to cook at this point. Add the courgette, anchovies and parma ham to the pan and fry for a few minutes. Add the passata, season with black pepper and add the sugar. Just before the pasta is cooked, add the basil leaves to the sauce. Add the cooked pasta. Serve with parmesan.
